The Future of Dairy is Non-Animal: Raffael of Formo
Anant speaks with Raffael, founder and CEO of food tech company Formo.
Formo uses microbial and precision fermentation to make dairy products without animals. Its founder Raffael sets out why he believes fermentation-derived dairy will become the dominant production technology over the next couple of decades.
He predicts that by 2035 more than half of all dairy products will come from non-animal origins, and explains the cost and targeting advantages he sees behind that shift.
